Mini Blueberry Cobbler (Paleo)

For the past 2 days I’ve had Olivia Newton-John’s “Physical ‘ stuck on repeat in my head. It’s been a brutal past 2 days to say the least.

I work for a famously hip Hotel & Spa on Miami Beach that has an awesome wellness program. As part of a feature showing what services we offer (mud baths, infinity pool on the bay, steam room & sauna, massages, etc.) the company produced a music video parody/remake of “Physical’.

I played the role of ‘Olivias’ Yoga Partner teaching the studs how to do simple yogi poses. It was hilarious. I was on set from 6am until 5:30pm, and probably was in front of the cam for 20 minutes total. One scene. Yeesh, show bizz is rough. I don’t envy actors at all.

This was one of the ‘chubby studs’ who just so happened to be part of the camera crew. Apparently the actor ditched out on the last minute and this guy had to cover. He was hilarious. We joked about how you could only see his ENTIRE junk while walking around set. We lol’d for days.

In all I had an awesome time and I can’t wait until the video is posted, sometime around Swim Week here in July on the beach. I promise to post it here as soon as it’s up on Youtube. I think you’ll have a good laugh. Kind of like when I posted my 5 Minute Cold Shower Video.

Moving right along! I think I’ve told you guys how obsessed I am with fresh blueberries lately. I’ve been making mini blueberry cobbler, crisps, and breads lately. And I’m not sorry about it. In fact, I might ALMOST be obsessed with blueberries as much as I am with sweet cherries. Almost. #Truestory, cherries are making me claim bankruptcy. I’ll probably have to sell my first born child to keep up with my addiction. Not that I have a first born child… Minor details, people.

I just bought another 5 lb bag of blanched almond flour from Honeyville Farms when they were doing a sale. Keep a lookout because the sell the best almond flour! And as far as coconut flour goes, I use Let’s Do Organic brand. It’s very easy to find at most health food’s stores and it’s very inexpensive.

Mini Blueberry Cobbler (Paleo)

Prep Time: 8 minutes

Cook Time: 40 minutes

Yield: 2 servings

Ingredients

  • Filling:
  • 1 ½ cups organic blueberries
  • 1 tbsp lemon juice
  • 1 tbsp arrowroot starch
  • 1 tbsp raw honey
  • Topping:
  • 1 pastured egg
  • 2 tbsp coconut flour
  • 1 tbsp blanched almond flour
  • 1 tbsp raw honey
  • 1 tbsp unsweetened almond milk
  • 1 tbsp virgin coconut oil
  • 1 tbsp sliced almonds
  • Dash salt

Instructions

  1. Preheat the oven at 375 degrees Fahrenheit.
  2. In a small mixing bowl, gently mix together the filling ingredients. The honey may be clumpy, that’s ok.
  3. Fill two greased medium-sized ramekins. I used a smear of coconut oil.
  4. Place both ramekins on a baking sheet and bake for 13 minutes.
  5. Meanwhile, in a clean small mixing bowl, mix together the topping ingredients. The batter should be pretty wet, not clumpy or crumbly.
  6. Remove the ramekins from the oven and scoop the batter on top. You can spread it flat or leave it looking rustic in small rounds.
  7. Bake in the oven for another 17-20 minutes. The topping should be fully baked.
  8. Serve immediately with vanilla coconut ice cream or coconut whipped cream.
